Chicken Summer Slaw

We were able to use some garden goodies for the salad last night. Snow peas and cucumber from the yard, plus sliced rotisserie chicken, sliced carrots, cabbage, sliced toasted almonds - tossed with a dressing made of orange balsamic vinegar, sesame oil, minced garlic, sugar, soy sauce and lime juice. It tasted like summer.

Chicken Taco Salad

Shredded chicken (making use of some leftovers) sprinkled with taco seasoning; diced onions and tomatoes; shredded cheese and lettuce; guacamole and sour cream. Sliced corn tortillas fried quickly in a little vegetable oil for the topper.

Buffalo Wing Dip

This recipe came from my mom Sooz.


Shred or dice 1 rotisserie chicken

Mix with:

16 ounces of cream cheese

1 8 ounce bottle of Frank's hot sauce

1 8 ounce bottle of bleu cheese dressing

1 cup of chopped celery


Top with shredded cheddar and bake at 350 degrees until bubbly and a little brown around the edges.


I couldn't find 8 ounce bottles of anything, so I estimated from the sizes I could find. This was really good, but it makes a lot, so best to cook it up for a crowd. We used tortilla chips for dipping. Crackers and crostinis would be good, too. It has a lot of zing, but isn't TOO spicy.

Husband Cookery: Southwest Chicken and Rice

This was a very tasty dish my husband put together. Here are the basics: chicken breast diced and sauteed in a little oil and southwest seasoning. Add salsa verde and quick cook rice and sImmer until done. Top with cheese and cilantro.

Mud Pies

Chicken sliced ultra-thin, dipped in beaten egg, and then dredged in a mixture of flour, salt and panko crumbs. Fried in a little peanut oil. These are called "mud pies." I don't know the reason why they're called that. It's the name my mother-in-law gave them.

Southwestern Blackened Chicken

I used a cheater seasoning mix for these blackened chicken breasts. The mix contained paprika, garlic chips, pepper, red pepper, oregano, salt and a little bit of brown sugar...and as you can see, I really piled it on.

Huckleberry BBQ Sauce Chicken Thighs

Grilled up a pack of cheap chicken thighs last night. I like to par-cook them for a quicker grill time, and remove most of the skin after the pre-cook. These were brushed with huckleberry BBQ sauce that was out of this world. My mom brought me a bottle of it from Roche Harbor, Washington, and the "brand name" is "Roche Harbor".

Pasta and Chicken in Parmesan Cream Sauce

Chopped grilled chicken and pasta in a basic cream sauce. Saute a minced clove of garlic in 2 tablespoons of butter, add about 1 cup of heavy cream and about a 1/2 cup of shredded Parmesan cheese and bring to a simmer. Let sauce cool to thicken. Re-heat and toss with cooked and drained pasta and the chicken. Pepper to taste and garnish with parsley.

Chicken breast doused in a mixture of seasoned salt, paprika, brown sugar, pepper and a pinch of cayenne - and grilled. Simple, quick and yummy!

Greasy, Sweaty Food

Taste Test: Chicken, Broccoli, Rice and Cheese Casserole

Last night's dinner was a test test of a chicken, broccoli, rice and cheese convenience food offered at Costco. The front picture on the box is beautiful. After cooking as directed in the microwave, this is the soupy reality. I guess it tasted like one would expect from instant rice, canned chicken and cheese product - a bit on the chalky side. This frozen food item won't make it into our shopping cart again.

Chicken White Sauce Pizza

An experimental pizza that turned out really good. Diced sauteed seasoned chicken breast over a four cheese Alfredo sauce, sprinkled with mozzarella and Parmesan and sliced red peppers. All on top of homemade thin crust and baked on a 450 degree baking stone. (1 cup of warm water, 1/2 tbsp yeast, 1 tbsp of sugar, 1 tsp salt, 1 tbsp of olive oil and about 2 cups of flour)

Southwestern Chicken Salad

I made good use of the goodies in my Organic box delivery this week - chopping up a tomato, red bell pepper, and red onion. To this, I added some drained, canned corn. Then, I put the chicken on the grill. The chicken was marinaded in a little bit of peanut oil mixed with a lot of spice. I used paprika and some Jamaican jerk seasoning.
I sliced up the chicken into strips, and then added some lettuce and a cheddar-jack shredded cheese to the salad - and tossed it all with ranch dressing. Yummy!

Roadside Ribs and Chicken

We attended a "parents' night" at my daughter's school last night and there was really no time for dinner. So, on the way home, I pulled up to a roadside ribs and chicken trailer and brought some home.
The ribs were good, very tender, but not very flavorful. The chicken was more flavorful, but I was too full to take more than just a taste after eating all these ribs. You can get a rack of ribs and half a chicken for about $20.
