Spaghetti Squash


One of our garden goodies: spaghetti squash. Slice in half and place squash cut-side down. Bake at 325-350 for about an hour. The pieces become squishy when they're done. Use a fork to rake out the "spaghetti" strands. This squash is very mild. I used it in place of pasta, and it added a slightly sweet and nutty flavor to the dish.

Roasted Acorn Squash

Roasted acorn squash was a lunch for me one day this week. Halve the squash, scoop out the seeds, sprinkle with a little salt, pepper, brown sugar and a pat of butter and bake at 350 degrees for about 40 minutes. I've heard that it's good pureed into a soup, too.
