BLT Salad

Happy, happy, happy that the cherry tomatoes are finally producing enough fruit for BLT salad. The dressing is mayonnaise with a splash of red wine vinegar. Crumble baked bacon (yes, baked, don't fry - 325 degrees in a baking dish for about 25 minutes, or until crisp), chopped romaine and halved cherry tomatoes in the dressing. This is also good stuffed in a baguette.

Got Tomatoes? BLT Salad for Lunch

Slice up some fresh garden tomatoes to whip together a B-L-T salad. Bake the bacon (yes, if you've been to Eat Boise before, you know that bacon is to be baked, not fried in a pan), chop it up, dice fresh tomatoes, add lettuce and a dressing that is mayo mixed with a couple of tablespoons of white vinegar. Toss together for a salad on its own, or use the salad to make a sandwich.

BLT Salad Sandwich

On the dinner menu: BLT salad sandwiches. This BLT salad is good on its own, too. Bake thick-sliced bacon, yes, bake it! Regular readers know that you NEVER fry bacon, you bake it at 325 degrees. No turning. No spattering. The dressing is mayonnaise and red wine vinegar whisked together. Chop tomatoes, Romaine and cooked bacon and toss with the dress. Load onto a fresh-baked baguette.

Chili's for Dinner

A quick dinner a Chili's Friday night. Above is the spicy shrimp lime salad with a tomato vinaigrette. It was a nice, light dinner.
My husband ordered the chicken fajita explosion salad, which was a lot like the shrimp salad, and also good eatin'.

BLT Salad Sandwich

I picked a nice batch of sweet cherry tomatoes for this recipe. It's a BLT salad sandwich. Simple to do. Mix mayonnaise and some red wine vinegar, enough to really cover the salad. Toss chopped romaine, tomatoes, and chopped bacon. Serve on a fresh baguette. Oh, and how to cook bacon. A military cook a long time ago told me, "never fry bacon." And I never have since that day. I bake the bacon in a deep dish, 350 degrees. You don't need to turn it, it doesn't splatter all over, either. Cook until done like you like it, and we like it crispy.
