Recipe Mashup

Monday recipe mashup. Fresh beets from our Full Circle organic box...and cardamom my mom purchased during a recent trip to Turkey.
Beets were diced and tossed with olive oil, sea salt, a sprinkle of white vinegar and about a half teaspoon of ground cardamom. Then, sealed in a foil packet and baked at 350 degrees for about 30 minutes. The foil was opened and beets caramelized for about 15 minutes. Oh my!

Naked Asparagus

A treat in our organic box delivery this week: fresh asparagus. I steamed it up and put it in this glass just for fun for my daughter. Just about every time I serve asparagus, I tell her that when I was a kid, we used to pick our own along the ditch banks in the countryside. It will be one of those stories that 'mom' told over and over again.

Organic Brown Box Delivery

A peek inside my organic Brown Box delivery Tuesday. I'm having a salad for dinner tonight. See that yellow thing? I thought it might be a pear. Although it's shaped like a potato, it didn't feel like one. My daughter was the brave one who took a bite and she said it was awful and threw it away. It might have been a small papaya? It was very soft and squishy.

Brown Box Delivery

A peek inside this week's organic "brown box" delivery. The contents are always a surprise, and that has helped us try new foods. This week: parsnips and a rutabaga are the surprises. I'm positive my family hasn't ever tried these. I think I'll chop them up with carrots and potatoes and some onion and roast them. I'll post the experiment later this week.
