Lemon Pudding Cake - Another Version

I featured a lemon pudding cake a couple of weeks ago that my mom had made. She was searching for a recipe that her mother used to make. Here's a version she sent me to try, which I thought tasted good and had an interesting meringue-like top. But it wasn't very much like a cake.

1/4 c flour

1 c sugar

1/4 tsp salt

1 tblsp of lemon zest

1/4 c lemon juice

2 beaten egg yolks

1 c of milk

Blend together and fold in 2 stiffly beaten egg whites. Bake at 350 degrees in a hot water bath for 50 minutes.

Lemon Pudding Cake

My mom's cooking experiment - lemon pudding cake. This was the second one she made and I thought it was yummy...and so did my daughter. She sent along another version of the recipe today that I'll be trying out this weekend. The recipe above used a cake mix and lemon pudding mix. The recipe "to try" is more from scratch.
