Recipe: slice French bread, brush with melted butter w/minced garlic, coat with grated Parmesan (the kind in the jar), and put cheese-side down in a hot skillet. Brown for about a minute, then flip the bread for another minute of browning.

Potato and Parm, Parm and Potato
A perfect dinner for me: an Idaho baked potato topped with butter, shaved Parmesan cheese and cracked pepper. Here's how we bake Idaho spuds. Pre-heat oven to 400 degrees. Wash and lightly scrub the potatoes. Pierce several times with a fork. Then brush the potato with olive oil and sprinkle with coarse sea salt. Parmesan Hearts
From that sheet of baked Parmesan yesterday came this heart. I also cut out a star. I tried to use a cookie cutter, but the Parm was too hard, so kitchen scissors did the trick. Sprinkle shredded Parm on a non-stick baking sheet and bake at 275 degrees until there is some brownness around the lacy edges. Remove from oven and let cool completely. Gently slide a spatula under the cheese and it should peel off in one piece :)Thursday, April 8, 2010
