Shredded chicken, canned corn, rinsed kidney beans, diced tomato and yellow bell pepper (both from the garden), and shredded cheddar-jack cheese tossed with peanut-cilantro dressing to add the green tinge and zing. A perfecto summer salad. The peanut-cilantro dressed was a gift. They sell it at the Cheesecake Factory and serve it on their Santa Fe salad.
