Chicken and Kale Soup

Made by hubby, who is still searching for the perfect kale recipe. This one was basically chicken noodle soup with kale instead of noodles...and some extra garlic.

Three-Cornered Cookies

Picked up these hamantaschen cookies at Deli Days. They're my favorite. They're lightly sweet with apricot filling. Some have berry filling.

Dairy Marriage Makes for 'Happily Ever After' Mashed Potatoes

These two cuties are the basis of excellent mashed potatoes. Boil and drain potatoes and dump them on the cream cheese and butter. Let it all sit for several minutes. Then mash 'em up. Add salt and pepper to taste.

Taste Test: Ling and Louie's

We had family in town, so we gave Ling and Louie's along Eagle Road a try. Above is the Teriyaki Chicken. Below is the Evil Jungle Princess Chicken. Eight of us ordered eight different dishes. These were very good, but the crowning glory was the meatloaf - and I missed that photo opportunity.
And this dessert was especially yummy. Banana spring roll. Banana cream cheese cake inside the wrapper dusted with cinnamon and sugar. Ling and Louie's is described as an Asian bar and grill. Creative and interesting flavors and kid-friendly.

Thinking About...Pizza Wheels

Cooked up a box of rotelle pasta to go with the sauce last night. So...does anyone remember a snack that might have been called Pizza Wheels? I have this vague memory of being a toddler and eating a whole box of them.

Hot Chocolate in June?

Yep. Kiddo requested it this afternoon. Brr. This is usually the time of year we need air conditioning, not heat.

Gnocci "No Thanks" From My Family...but I Liked It

Soft, pillowy potato dumplings in sauteed onions, garlic, mushrooms and snow peas - along with a can of diced tomatoes, basil, salt and pepper. While I consider this a perfect dinner, I'm the only one with that view at my house. More for me!
